No Bake Mango Cheese Cake

Mangoes have a very soft and mouthwatering taste. I am always addicted to this queen of fruits. Now it's time to try new recipes with it. Cakes always give happiness and a combination of mangoes is purely divine. Be ready to fall in love with this wonderful "No Bake Mango Cheese Cake". Cheese and creamy mango layer at the top and crunchy cookie layer at the bottom will dance in your mouth and don't be ashamed to lick your fingers. make cheese cake without oven Me as a 90's kid always wanted to buy a birthday cake for every birthday. I never dreamt of baking a cake for myself and my family. I was flying when my first cake for my husband turned out perfect and I am eagerly waiting to load my love on the cake for my chweet devil Naviran (my son) for his birthday. Baking is a therapeutic process that gives you satisfaction and pleasure. Whenever I feel low I goto my kitchen and put on my apron to baking new goodies. It gives me a soothing feeling and cools me down. Try and comment if you have the same attachment with baking. Many of us do not have an oven at home. The best way to kick start making cakes is the "No Bake" method and I have written a clear step by step recipe for 'No Bake Mango Cheese cake' today. The process seems to be huge but it is just blending the ingredients all together and set it in the refrigerator for a few hours. Yes, your cake is ready :) Hope you will try and enjoy it. Ingredients
    For Bottom Cookie Layer
  • 130 g Any Biscuits (Marie gold,Nutri Choice, Oreo etc)
  • 60 g Melted Butter
  • Cheese Cake
  • 300 g Cream Cheese
  • 125 ml Full Cream
  • 3/4 cup Powdered Sugar
  • 1 cup Pureed Mangoes
  • 10 g Plain Gelatine
Instructions
  1. keep the biscuits in a zip lock cover for crushing
  2. Crush the biscuits nicely. you can even grind it in a mixer grinder.
  3. Transfer the biscuits in a mixing bowl mix about 60grms of melted butter.
  4. Scoop the biscuits in a cake tray and press to the bottom with a glass. Refrigerate till we prepare the Mango cream.
  5. Add in 300grms of cream cheese in a mixing bowl and beat it till it turns fluffy.
  6. Mix about 125ml of full cream and beat for 30 seconds.
  7. Add in 3/4 cups of powdered sugar and mix by beating slowly.
  8. Add in 1 cup of sweet mango puree and beat nicely.
  9. Mix gelatine in luke warm water and keep aside for 5 mins.
  10. Microwave or double boil to melt and mix slowly to the batter by mixing it in a small bowl.
  11. Add diluted gelatine and mix gently.
  12. Transfer it to the cake tray
  13. Add a few drops of mango puree on top.
  14. Draw a freehand design using a toothpick.
  15. Refrigerate for minimum of 6 hours and serve.
